Craving for Disneyland's Caramel Popcorn? Look not further!
If you’ve ever been to any Disney Park, you would be very familiar with the sweet smell that lingers throughout the park - eventually leading you to the popcorn cart that’s giving off the delicious scent.
Sweet, salty, and buttery -- it’s the taste of childhood in a bucket. While we wish we could jetset to Disneyland for this treat, we’ll have to stay at home a little bit longer until the pandemic blows over. But if you’re missing some of your #DisneyMagicMoments, here’s a quick caramel popcorn recipe that will instantly transport you to the happiest place on Earth.

Ingredients:
- 8 cups popped popcorn (you can choose a light microwaveable popcorn to avoid adding extra oil in the recipe)
- 1 cup unsalted butter
- 1 ½ cups brown sugar
- ⅓ cup corn syrup
- ½ tsp vanilla extract
- 1 tsp salt (additional to taste)
- 1 tsp baking soda
Instructions:
- Preheat oven to 225F
- Line a baking sheet with a silicon mat or parchment paper. Spread popcorn evenly on top of the baking sheet. Set aside.
- Combine butter, brown sugar, and corn syrup in a saucepan over medium heat. Whisk until butter is melted and brown sugar is completely dissolved.
- Continue to whisk and add the vanilla, salt, and baking soda. The baking soda will cause some bubbling.
- Remove from heat once the mixture thickens and its texture becomes lighter and fluffier.
- Pour your mixture over the popcorn and quickly toss until the popcorn is fully covered.
- Place in the oven for 3 to 4 15-minute intervals, tossing the popcorn and breaking any clips in between intervals, for a total of 45 to 60 minutes.
- Take out of the oven and transfer the baked popcorn into a fresh parchment paper to cool.
