  • Easy-To-Follow 'Palamig' Recipes To Help You Cool Down In This Weather

    Did somebody say 43-degree heat index?!

    We’re sure everybody’s been complaining about Manila’s sticky and uncomfortable weather the past few days. According to The Manila Times, the weather reached a scorching (literally) 43-degree heat index - the highest recorded heat index so far into the year, and summer is only beginning. With heat levels this high amid the pandemic, we hope you’re all staying safe and hydrated. In case you need an extra panlamig while you work in front of the electric fan, here are a couple easy ice-cool recipes to try: 

    Mango Sago

    Ingredients
    • 4 pieces cubed mango
    • 1 cup mango juice
    • 1/4 cup gata or coconut milk
    • 3 tablespoons sugar
    • 1 cup sago or tapioca pearls (make sago from scratch with our recipe)
    • 1/4 cup milk
    Instructions
    1. Start off by chopping four ripe mangoes into cubes then transfer half of the mango cubes to a bowl and set aside. 
    2. Next, combine remaining mango cubes, one cup mango juice, 1/4 cup coconut milk, 1/4 cup milk, and three tablespoons sugar in a blender. 
    3. Lastly, add the leftover mango cubes and 1 cup cooked sago
    4. Cover and refrigerate until cool and ready to serve. 

    Ice Candy

    Ingredients
    • 1 cup shredded young coconut meat
    • 2 cups young coconut water
    • 1 cup fresh milk
    • 1 14oz. can condensed milk
    • 1 teaspoon vanilla extract
    Instructions
    1. Start off by combining coconut water, fresh milk, condensed milk, and vanilla extract in a large mixing bowl.
    2. Next, add the shredded young coconut and stir.
    3. Pour part of the mixture into ice candy bags using a funnel and tye a knot on the end.
    4. Place in the freezer and serve when frozen.

    Vietnamese Coffee

    Ingredients
    • 1 tablespoon ground coffee
    • 2 tablespoons sweetened condensed milk
    • 1 cup hot water
    • 1 Coffee filter
    Instructions
    1. Start off by pouring ground coffee into a coffee filter base.
    2. Next, pour the sweetened condensed milk into a glass.
    3. Place the filter on top of the glass.
    4. Pour hot water into the filter and wait for the coffee to drip through the filter and into the glass.
    5. Add ice to cool and stir well before serving.

    Halo Halo

    Ingredients:
    • 2 cups of shaved ice
    • 1 ripe large banana
    • 1 cup bottled shredded coconut
    • 1/2 cup sweet corn or chickpeas
    • 2 cups evaporated milk
    • 1 cup firm gelatin cut into cubes
    • 2 ripe mangoes
    • 1 cup ripe jackfruit
    • 1 cup ube halaya
    • 4 scoops of favorite ice cream
    • 1/2 cup rice pop
    Instructions:
    Start off by dividing each ingredient into equal parts and place each ingredient in a glass layer by layer.
    1. Next, put one-half cup of shaved ice into the glass.
    2. Pour a quarter of milk evap over shaved ice into the glass.
    3. Add a spoon of ube halaya on top
    4. Lastly, serve with a scoop of ice cream.

    Mango Graham Cake

    Ingredients:
    • 1 pack all purpose cream
    • ½ cup condensed milk
    • 24 pieces graham crackers
    • 2 cups sliced mangoes
    Instructions:
    1. Start by combining the all purpose cream and condensed milk.
    2. Next, place 2 tbsp of the mixture on a glass dish.
    3. Arrange graham crackers in the bottom of the glass dish and top with the cream mixture.
    4. Cover first layer with mango.
    5. Repeat procedure to form 2 layers. 
    6. Place in the refrigerator for 4 hours or until the graham is moist with cream then serve.

    Mais Con Yelo

    Ingredients
    • 1 can canned cream-style corn
    • 1 cup crushed ice
    • 1 can canned whole corn kernels
    • 1 can evaporated milk
    • sugar
    Instructions
    1. Start off, by putting two tablespoons of cream-style corn in a glass.
    2. Next, top off the glass with half a cup of crushed ice.
    3. Add a couple tablespoons of whole kernel corn on top.
    4. Top again with half a cup of crushed ice.
    5. Add sugar according to taste.
    6. Lastly, pour in evaporated milk then serve.

    Ice Scramble

    Ingredients:
    Ice Scramble Mixture:
    • 3 Tablespoons Banana flavoring
    • 2/3 cup Evaporated Milk
    • ¾ cup Sugar
    • 4 ½ cups Ice
    • ¼ Teaspoon Natural Red food coloring
    Garnish:
    • ¼ cup Chocolate syrup
    • 2 Tablespoons Powdered milk
    • 5 pieces grahams chocolate crackers
    • Milk powder
    Instructions:
    1. Start off by mixing milk powder and finely crushed graham crackers and set aside.
    2. Next, in a blender, combine banana flavoring, powdered milk, sugar, water, red food color and ice until its a smooth mixture.
    3. Place ice scramble mixture in a container and freeze.
    4. Place graham mixture at the bottom of each cup then fill with ice scramble mixture.
    5. Lastly, drizzle with chocolate syrup then sprinkle a bit of graham mixture and serve.

    Sago’t Gulaman

    Ingredients:
    • 3 cups sago
    • 1 sachet gelatin powder
    • 3 cups brown sugar
    • 1 tbsp vanilla extract
    • 2 to 3 cups water
    Instructions
    • Start off by cooking the sago and set aside.
    • Cook the gelatin according to package instructions and set aside.
    • Place the brown sugar in a cooking pot and caramelize using low heat.
    • When the sugar starts to melt, put in water and vanilla extract then turn off heat and let cool.
    • In a glass, combine sago, sliced gelatin, 3 tablespoons of sugar mixture, and a cup of cold water..
    • Lastly, stir well and serve.

    Saba Con Yelo

    Ingredients
    • 4 to 6 pieces ripe saba banana peeled
    • 3/4 cup brown sugar
    • 1 1/2 cups water
    • 1 teaspoon vanilla extract or vanilla essence
    • 1/4 teaspoon salt
    • 1 1/2 cups shaved ice
    • 1/4 cup evaporated milk
    Instructions
    1. Start off by pouring the water in a cooking pot and let boil.
    2. Next, add in brown sugar and stir.
    3. Add the vanilla extract and salt. Let cook for 1 minute.
    4. Add the saba banana and cover the cooking pot
    5. Cook and let the liquid reduce to half. Turn off the heat and allow the banana to cool.
    6. Transfer to a serving bowl and top with shaved ice
    7. Lastly pour evaporated milk and serve.
