What to expect
Make sushi. Discover umami. Taste Kanazawa.
About a 3-minute walk from Kanazawa Station. At Nakada Cooking School, founded in 1969, this is a 2.5-hour experience where you make five Japanese dishes alongside a second-generation instructor and enjoy eating them together. Even cooking beginners are welcome to join.
For nigiri sushi, you will make six pieces yourself, including the luxury fish blackthroat seaperch (nodoguro). In addition, compare them by eating sushi made by the instructor. Experience how the texture and flavor change depending on how it is shaped, even with the same ingredients.
Learn about "umami," which supports the deliciousness of Japanese cuisine, by extracting first-dashi stock from kelp (kombu) and bonito flakes. You will also try making Kanazawa's local dish jibuni, rolled Japanese omelet (dashimaki tamago) made in pairs, miso soup, and seasonal side dishes. You can also experience using authentic Japanese kitchen knives.
After cooking, take your time savoring the five dishes you made yourself. Japanese green tea is provided, as well as sake as an aperitif for those aged 20 and over who wish to have it.
Enjoy explanations of the dishes and food culture through real-time AI translation supporting English, Chinese, Korean, and more. At the end, you can take home a completion certificate with your name written in Japanese and a digital recipe in English.
