    Ube-Cheese Pandesal who?

    The enhanced community quarantine has got everyone caught up in a baking craze. Many have tried their hand at baking their own loaves of bread and experimenting with different banana bread recipes
    Now, a new treat has come into the spotlight - Ube Cheese Pandesal! For sure, your Instagram feeds have been filled with people baking these purple pillowy soft treats with a savory filling. But there’s more to look forward to aside from Ube Cheese Pandesal. We’ve compiled a list of four other recipes to satisfy your ube-cheese cravings! Don’t get intimidated by them - they’re definitely worth the time and effort!

    No-bake Ube Cheesecake

    Serves 10 people
    Ingredients:
    • 1 cup mixed nuts, (shelled pistachios, cashews, and pumpkin and sunflower seed nuts)
    • 1 cup graham cracker crumbs
    • 1/2 cup sugar, plus 2 tablespoons, divided
    • 1/8 teaspoon salt
    • 1/3 cup butter, melted
    • 2 bars cream cheese, softened (225 gram bar each)
    • 1/2 cup all-purpose cream
    • 1 tablespoon vanilla extract
    • 1 jar ube halaya, (340 grams)
    Instructions:
    1. In a blender or food processor, finely process nuts and seeds until finely chopped, scraping sides as needed. Transfer mixture to a bowl. 
    2. Stir in graham cracker crumbs, 2 tbsp. sugar, and a pinch of salt. Pour in melted butter and mix until mixture retains its shape when squeezed in your hand. 
    3. Press mixture evenly onto the bottom of a 9-inch springform pan. Chill until ready to use.
    4. In the bowl of a mixer with the beater attachment, beat cream cheese and remaining sugar until light and fluffy. Add cream and vanilla extract, and beat until well mixed. 
    5. Spoon ube into cream cheese mixture in batches, beating on low until well mixed before adding the next heaping spoonful. 
    6. Pour mixture onto crust and smoothen the surface. Tap pan on the counter to release any air bubbles, then chill at least 4 hours or until firm.
    7. To serve, remove cake from springform pan. Decorate with additional nuts, seed nuts, and ube as desired. Slice and serve while cold.

    Ube Cheese Puto

    Serves 8-10
    Ingredients:
    • 1 pack condensed milk
    • ¾ cup evaporated milk
    • ¾ cup water
    • 3 large eggs
    • 3 tbsps melted butter or margarine
    • 3 cups all-purpose flour
    • 3 tbsp baking powder
    • 2 tbsps ube flavoring
    • 2 cups grated cheese
    Instructions:
    1. Combine flour and baking powder in a bowl.
    2. In a bigger bowl, mix together condensed milk, evaporated milk, water, eggs, melted butter and ube flavoring. Add in the flour mixture into the wet ingredients. Gently mix until smooth and free of lumps.
    3. Pour the batter into the puto molds, then top with grated cheese. Steam for about 10 minutes over medium heat. To test for doneness, puto should spring back when lightly pressed. 
    4. Let it cool slightly before taking the puto out of its mold.

    Ube-Cheese Leche Flan Cake

    Serves 8-10
    Flan layer Ingredients
    • ½ cup  water
    • 1 cup sugar
    • 1/8 teaspoon cream of tartar
    • 7 pieces egg yolks
    • 1 piece whole egg
    • 1 cup ½ evaporated milk 1 big can
    • 1 cup condensed milk 1 can
    Ube cake ingredients
    • 1 pack cake mix
    • 1/3 cup vegetable oil
    • 1 cup + 1 tablespoon water
    • 3 pieces eggs separated
    • cup ¼ ube powder
    • 1 tablespoon ube flavoring
    Instructions:
    1. Preheat oven to 350°F/177°C. Prepare four 7x1-inch round pans.
    2. In a small saucepot, mix together water, sugar and cream of tartar. Heat up until it becomes light caramel in color. Pour these in two of the round pans. Set aside.
    3. In a small bowl, whisk together egg yolks, whole egg, evaporated milk and condensed milk. Pour this over a sieve to remove the bubble. Divide among two of the pans with the caramel at the bottom.
    4. Bake in the preheated oven on a bain-marie for 30-35 minutes or until set. Set aside to cool. Put in the refrigerator to set for a few hours, better if overnight.
    5. For the cake: grease and line two of the round pans, set aside. In a bowl, whisk together cake mix, vegetable oil, water, egg yolks, ube powder and ube flavoring until smooth. 
    6. In another bowl, whisk egg whites until it forms stiff peaks. Fold whipped egg whites into ube cake batter. Pour into the prepared pans. Bake in the preheated oven for 20-25 minutes or until cooked. Place also in the refrigerator to cool and set.
    7. To assemble cake: Loosen the flan using a very thin spatula. Place the cake on the pan with flan then tip this over a serving dish. Do the same for the other cake and flan. Place one layer on top of the other to make 4 layers of cake. Serve chilled.

    Ube Cheese Pandesal

    Serves 3-6 people
    Ingredients:
    • 4 cups bread flour
    • 2 tsp. salt
    • ¼ cup sugar
    • 2 tsp. instant yeast
    • ½ cup powdered milk
    • 1 cup water
    • 2 tsp. ube extract
    • ½ cup butter
    • 1 cup white cheese, cut into cubes
    • 2 cups fine breadcrumbs
    Instructions:
    1. Combine flour, salt, sugar, yeast, and powdered milk into the bowl of a stand mixer fitted with a dough hook. Start on low speed until dry ingredients are well combined.
    2. Add the water and ube extract, then turn mixer to medium speed and run for 3-5 minutes or until a rough dough forms. 
    3. Add the butter by the tablespoon and continue to work the dough until smooth and elastic, about 15 minutes total.
    4. Remove bowl from mixer and cover in plastic wrap. Let dough rise for 1 hour or until doubled in size.
    5. Turn dough out onto a floured surface and cut into 12 equal pieces. 
    6. Roll each piece into a ball and cover the pieces with plastic wrap.
    7. Working one piece at a time, flatten the ball into a circle and place a piece of white cheese in the center.
    8. Gather the edges of the dough, sealing the cheese inside. Roll into a ball then cover in breadcrumbs until well coated.
    9. Transfer to a 9×9 inch square pan lined with parchment and cover with plastic wrap.
    10. Repeat the process with all remaining pieces of dough.
    11. Once all 12 pieces are stuffed with cheese, cover lined baking sheet with plastic and let dough rise again for 30-40 minutes or until doubled in size.
    12. Preheat oven to 350F.
    13. Bake pan de sal in preheated oven for 25-30 minutes until golden.
    14. Let rest before serving.
