What to expect
Wanko soba is an Iwate tradition: small one-mouthful bowls of soba served one after another. At this Kabukicho shop, Japan’s first conveyor-belt wanko soba restaurant, bowls glide past like conveyor-belt sushi, so you eat at your own pace.
For 40 minutes, eat as many bowls as you like. Add spring onion, wasabi or tempura bits, and stack your bowls. Your tower is your score.
