What to expect
Discover Japan’s fermentation culture in a hands-on dessert class in Tokyo led by Naoko, a certified fermented food expert. In a small group of up to six, learn to make vegan sweets using amazake, a naturally sweet fermented rice paste, and sake kasu, a byproduct of sake brewing. Prepare three-color amazake jelly, an orange amazake marinade, a matcha amazake rice flour muffin, and a sake kasu cocoa truffle. You’ll also enjoy a cup of sakura tea and try a soothing sake kasu hand mask. Guests under 20 or those avoiding alcohol can make banana raisin crackers instead of the cocoa truffle with advance notice.
