An indulgence is what we would like to call it, but one look at this Peking Duck meal would totally get anyone’s mouth drooling! And when it comes to cooking up a legit Peking Duck dish, no one does it better than TungLok.
The origins of this renowned duck dish stem from Peking, which of course is modern-day Beijing. Traditionally Peking Duck was served in Chinese Royal Palaces, so what you’re feasting on now is technically fit for a king!
Oh, did we also mention that TungLok follows the tradition of having the duck carved in front of the diners too?

The Art of a perfect Peking Duck dish

A perfect Peking Duck dish always starts with the selection of the duck itself, from the quality of its skin to the environment it was raised in. TungLok uses ducks that come from the Irish Highlands as they are considered to be of the best quality.
After stuffing and marinating the duck, it is let to dry for 1 day before being kept in the refrigerator for 2 days, this ensures that the skin comes out extra crispy while the meat remains tender, enough so to melt in your mouth!

Peking Duck roasted the traditional way

At TungLok, the Peking Ducks are prepared the traditional way in a brick oven, ensuring that you get an authentic-tasting meal. With the oven being visible to customers, you can even catch a glimpse of the ducks being roasted if you visit the TungLok outlet at Orchard Central at the right time!

Each duck is roasted for 50min and rotated every 10min, ensuring a consistent cook and even skin colour around the whole duck. If you’re wondering how the Peking Duck’s skin gets so crispy, the answer lies in the moisture! As the moisture evaporates, the skin gets crispier while the meat remains tender and soft.

Savouring all 88 pieces of your Peking Duck meal

Each Peking Duck meal at TungLok is hand-carved into 88 auspicious pieces by a chef at your tableside. Think of it as a pre-meal performance to get you hyped up for the actual dish itself. With ASMR-worthy sounds of the duck’s crispy skin crackling to the aroma of its well-marinated meat floating into your nose, this definitely elevates your dining experience.

Great attention to detail is also placed towards your dining experience. Heater bags are filled with water to produce steam which keeps your ducks and pancakes warm while you go about your meal. Because no one likes a soggy and cold slice of Peking Duck right!

With so much effort being put into cooking this dish, it’s only right that you at least get a taste of the Peking Duck as it is! A burst of natural sweetness and aromatic flavours will burst into your mouth with each bite.

    Peking Duck with Popping Candy

If you loved eating popping candy as a child, you’ll definitely love this combination! First, dip your slice of Peking Duck into some dark sauce before dipping it into the popping candy. Besides a combination of sweet and savoury tastes, you’ll also get to enjoy the nostalgic popping sensation in your mouth.

A refreshing and tangy mustard sauce to go with your duck

A delightful twist to a traditional Chinese dish, this homemade mustard dipping sauce packs a tangy punch to your meal without it being too spicy! Usually found in Western cuisine, this marriage of East meets West is something we totally approve of! It’s also a good palate cleanser for your meal, mid-way through.

    Peking Duck Pancake

Last but not least, you can also have your Peking Duck the traditional way, wrapped in a thin slice of Chinese pancake coupled with some condiments like cucumbers and onions!
