What to expect

Discover the heart of Japanese cuisine through dashi, the essential broth behind many traditional dishes.

In this hands-on experience in Kyoto, you will explore the world of umami, the unique flavor that defines Japanese food. Learn about key ingredients such as kombu (kelp) and katsuobushi (dried bonito flakes), and try shaving bonito flakes using a traditional tool.

Taste different types of dashi (broth) and see how small changes in ingredients create different flavors. Using freshly prepared dashi, you will make simple dishes like miso soup and onigiri (rice balls) - recipes you can recreate at home.

The experience takes place in a quiet Kyoto neighborhood, with an optional visit to a 150-year-old traditional machiya house.
