SKYE’s Grand Brunch with Carving and Seafood Pasta Stations for Weekend Indulgence

SKYE Roofbar & Brasserie proudly presents its newly elevated weekend experience, The Grand Brunch. The menu showcases French-inspired semibuffet experience, complemented by stunning views of Victoria Harbour and Victoria Park.

This culinary experience promises a delightful gourmet journey that refines the city’s brunch scene, perfect for gatherings with friends and family or a romantic escape for couples. The revamped brunch elevates the weekend ritual with a sophisticated selection of premium ingredients and contemporary French brasserie elegance in a chic, airy setting that seamlessly blends indoor sophistication with the allure of the outdoor terrace.

Guests will begin with the Kaviari Baenki Caviar Station, offering luxurious premium caviar alongside a refreshing display of Seasonal Seafood. Complementing this is the Gastro Bar Station, an abundant showcase of artisanal Cold Cuts, Smoked Seafood, classic French Quiche Lorraine, a refined assortment of Cheeses, our Homemade Salad and Daily Soup.

Following the exquisite appetizers, guests can further customize their feast by selecting a premium seafood main from options including the rich Boston Lobster Thermidor (Add HK$180 for half), perfectly prepared Seabream Filet with Provençale Vegetable Tian, or juicy Grilled Prawns with Baked Eggplant, Piperade with Prosciutto Chips.

The true highlight of the brunch awaits at the newly enhanced Carving Station and Seafoo Pasta Station , bringing the brunch experience to new heights. The Craving Station offers Stockyard Australian Wagyu Ribeye carved to order and served with classic Red Wine Sauce or Green Pepper Sauce. Nearby, the Seafood Pasta Station features the signature Fresh Sea Urchin Tagliolini with Coral Bisque, a dish that highlights the rich umami flavours of the sea.

Wrap up the weekend feast with an enticing selection of Classic Dessert Buffet, “A la Francaise”. Guests can savour handcrafted cakes, pastries and tartlets, featuring highlights such as Mille Feuille, Paris Brest, and Fruit Loaf Cake. Complementing these treats are the home-made ice creams and sorbets, each offering a perfect balance of sweetness, ensuring a memorable finale to the dining experience.
