Tucked into the basement of a quiet building in Kichijoji, Sushi Toiro is one of Tokyo’s most exciting new sushi destinations, offering a refined 22-course omakase that puts pure technique center stage. Opened in 2024 by a chef with over 30 years of experience across sushi kappo, traditional sushi, and creative concept dining, Toiro—named for its play on “ten guests, ten colors”—delivers a one-of-a-kind sushi experience that changes with each visit. Signature dishes like seared tuna head nigiri (so soft it rivals fatty tuna) and the vibrant crunch of sweet squid leave a lasting impression. Classic Edomae touches, such as red vinegar-seasoned rice and minimal garnishes, highlight the pristine quality of fish personally sourced from Toyosu Market. A lovely dining experience! Every course was amazing and flavourful. Ingredients were fresh. The tamago was divine with its pudding-like texture. The staff was also very understanding and accommodating given that I messed up the timing and yet they allowed me to join and served me the full course.
