Ritz Carlton Hong Kong

Highlights:

  • German-born Executive Chef Peter Find is spearheading the afternoon tea menu creation by adding a German touch paying homage to Steiff’s history. He also incorporates premium chocolate brand Valrhona into the lovable treats. Highlights of the sweet items include traditional German spice cookies Pfeffernuesse, which is made of pure honey, almond meal, ground white pepper, and most importantly, gingerbread powder Lebkuchengewürz, which gives the pastry an authentic German flavor. Another favorite is Black Forrest Verrine, a lovely glass cup housing layers of Kirsch cherry compote, sponge cake and mousse made with heavenly Valrhona chocolate, chocolate chips and Kirsch-infused cream. Valrhona Christmas Tree, which features chocolate cremeux, chocolate gingerbread ganache and crumbles made with Valrhona Araguani 72% dark chocolate, is every chocolate lover’s dream. Roasted Chestnut and Wild Mushroom Duxelle Cube Sandwiches is inspired by Chef Peter’s signature Mushroom Chestnut Soup. Nutty flavor of house-made caramelized chestnut and earthy notes of mushroom duxelle create a symphony of tempting tastes and aromas. Sandwiched between spinach bread and further topped with chestnut shavings, this savory delicacy is truly not to be missed.
