What to expect
The owner and head chef will personally guide you through the fundamental "umami" of Japanese cuisine – dashi (soup stock) preparation. You will sample various dashi stocks made from different ingredients, savoring the distinct "umami" profiles. For the meal, enjoy an authentic Japanese set course prepared by the chef using homemade dashi.
- The entire experience lasts 3 hours (1 hour for the experience, 2 hours for the meal).

[Experience Details]
- Explanation of "umami" in Japanese cuisine (umami as a characteristic of Japanese food, types of dashi)
- Explanation of dashi ingredients (various ingredients such as kombu kelp, dried bonito flakes, dried shiitake mushrooms, sea bream bones, shellfish, etc.). You can experience touching full-size kombu kelp and shaving dried bonito flakes.
- Dashi Preparation Experience (Observe the chef's demonstration of making basic "kombu and bonito dashi" and sample it. You will also learn how to prepare dashi using ingredients prepared that day (dried shiitake mushrooms, sea bream bones, shellfish, etc.) and sample the pre-prepared dashi to appreciate the different umami flavors.

- A traditional Japanese Kaiseki course meal will be served. (Limited original set course)
- Appetizer, Soup, Sashimi, Assorted Platter, Omi Beef Steak, Sea Bream Rice Cooked in a Clay Pot, Grilled Dish, Vinegared Dish, Simmered Dish, Pickled Vegetables, Fruit ※Menu is for reference only and is subject to change based on the restaurant’s offerings on the day.
- During the meal, tea soba noodles made with matcha and served with dashi-based dipping sauce will be provided.
