    Being home the whole day during this #dudukrumah period, we’ve learnt that most of us can actually cook! And also that a lot of effort goes behind those #foodporn shots that you constantly see on your social media feeds.

    As we know, whipping up a feast takes up quite a bit of time and is often a hassle. So here are 10 simple recipes that you can make quickly with just one pot, and we assure you that they’re delicious!

    1. One Pot Pasta 

    Simple in terms of ingredients and preparation, when ready, this pasta dish is bound to make a hearty lunch or dinner for you and your family!
    Cooking time: 20 minutes
    Ingredients:
    • Pasta (12oz)
    • 1 Thinly sliced onion
    • Halved cherry tomatoes (12oz)
    • 4 cloves of thinly sliced garlic
    • black pepper
    • 2 Teaspoons of salt
    • ¼ Teaspoon of red pepper flakes
    • 2 Sprigs of basil
    • 4½ Cups of water

    2. Greek Chicken & Rice

    If you’re a fan of chicken rice, you’ve got to try the Greek version that's different from our usual nasi ayam!
    Cooking time: 60 minutes
    Ingredients:
    • 5 Pieces of chicken thighs, bone-in, and skin removed
    • 1 Finely chopped small onion 
    • ⅓ Cup og olive oil
    • 4 Grated garlic cloves
    • 1½ Cups of basmati rice
    • 1½ Cups of​ chicken broth or water
    • 1½ Teaspoon of salt
    • Black pepper, to taste
    • 2-3 Tablespoons of lemon juice
    • 1-2 Diced roasted red peppers
    • 4-5 Pitted and sliced olives
    For the Marinade:
    • ¼ Cup of freshly squeezed lemon juice
    • 2-3 Tablespoons of olive oil
    • 4-5 Grated garlic cloves 
    • 2 Tablespoons of dried oregano
    • Salt and black pepper, to taste
    • 1 Teaspoon of cumin powder

    3. Spicy Sausage Rice

    No you are not on an episode of MasterChef, and you will not be called an Idiot Sandwich. But what you would get out of this is a plate of flavourful spicy sausage rice that would make anyone’s mouth drool.
    Cooking time: 50 minutes
    Ingredients:
    • 5 Spicy sausage (Chorizo)
    • 1 Diced red onion
    • 1 Tablespoon of olive oil
    • 1 Diced red bell pepper
    • 2 Cloves of diced garlic
    • 1 Teaspoon of paprika
    • 1½ Cups of rice
    • Drizzle of white wine
    • 3 Cups of chicken stock
    • 1 Diced tomato
    • Sliced spring onion
    • Parsley

    4. Pork chops in Mushroom and Garlic Gravy

    A staple at every other western food stall around, recreate this creamy and tender dish in under an hour. 
    Cooking time: 30 minutes
    Ingredients:
    • 4 Boneless pork chops
    • salt and pepper to taste
    • 2 Tablespoons of butter
    • A Splash of olive oil
    • 12 Sliced button mushrooms
    • ½ Chopped white onion
    • 3 Cloves of chopped garlic
    • 2 Tablespoons of flour
    • 1½ Cups of beef broth
    • Fresh parsley for garnish

    5. Turkey/Chicken Chilli

    A great dish to cook if you have leftovers from your previous meal, this western chilli dish makes for a great lunchtime snack.
    Cooking time: 60 minutes
    Ingredients:
    • 2 Tablespoons of olive oil
    • 1 Diced red bell pepper
    • ½ Chopped leek
    • ½ Chopped carrot
    • 2 Chopped red onion
    • Shredded turkey/chicken thigh 
    • 1 Sliced red chilli
    • 1 Teaspoon of cumin
    • 1 Teaspoon of smoked paprika
    • 2 Tins of tomatoes
    • 2 Tins of water
    • 1 Tin of chickpeas
    • 1 Tin of butter beans
    • Coriander for garnish
    • 1 Teaspoon of balsamic vinegar

    6. McDonald’s Hot Apple Pie

    While this recipe requires two pots, recreating anything from McDonald’s gets a free pass for now. Recreate this simple yet tasty dessert that would help curb your Mcdonalds cravings without stepping out of your home.
    Cooking time: 35 minutes
    Ingredients:
    • 3 Small Green Apples (peeled cored and diced)
    • 4 Tablespoons of Brown Sugar
    • 1 Teaspoon of Ground Cinnamon
    • 1 Teaspoon of Ground Nutmeg
    • 2 Sheets of Ready Rolled Frozen Puff Pastry (thawed)
    • Vegetable Oil (for deep frying)

    7. Creamy Rice Pudding

    This simple dessert is perfect to accompany you for one of those nights where you would want to binge your favourite drama series. Simple to prepare, all you need to do is whip it up in the afternoon and let it chill in the fridge! 
    Cooking time: 35 minutes
    Ingredients:
    • ½ Cup of uncooked long-grain white rice
    • ¼ Teaspoon of kosher salt
    • 1 Cup of water
    • ¼ Cup white sugar
    • 1⅓ Cups milk
    • ½ Teaspoon of vanilla extract
    • ⅛ Teaspoon of ground cinnamon
    • 1 Large egg yolk
    • 1 Tablespoon of cold butter
    • 2 Tablespoons of dried cherries, chopped

    8. Mac and Cheese

    The perfect meal for a lazy weekend afternoon, whip up this meal in under 30 minutes for a smooth and creamy lunch!
    Cooking time: 20 minutes
    Ingredients:
    • 4 Cups of whole milk
    • 3 Cups of elbow macaroni
    • 3 Cups of  Cheddar, shredded 
    • 1 Cup of part-skim mozzarella, shredded
    • 2 Ounces cream cheese, cut into small pieces
    • 2 Tablespoons of unsalted butter, cut into small pieces
    • 1 Teaspoon of Dijon mustard
    • Large pinch cayenne pepper
    • Large pinch freshly grated nutmeg
    • Kosher salt

    9. Vegan Pasta

    This one’s for our vegan friends, or those of you who are looking to go on a diet during this time (due to all the snacking).
    Cooking time: 20 minutes
    Ingredients:
    • 1 Onion diced
    • 1 Pepper diced
    • 4 Cloves garlic
    • 1 Tablespoon of chili 
    • 1 Tablespoon of ground coriander
    • 1 Tablespoon of paprika
    • 1 Tablespoon of cumin
    • 3 Tablespoons of tomato paste
    • 1 can of cooked lentils
    • 1 can of black beans
    • 1 can of kidney beans
    • 1 Tablespoon of maple syrup
    • ⅓ cup of nutritional yeast
    • 2 cans of tomatoes
    • 500ml of vegetable stock
    • 500g uncooked pasta
    • salt to taste
    • vegan cheese to top

    10. Chicken & Couscous

    Another recipe that is healthy, low on carbs but packs a punch when it comes to flavour! This easy to prepare dish is a good starter for a clean diet! 
    Cooking time: 50 minutes
    Ingredients:
    • 8 Skin on, bone-in chicken thighs 
    • 2 Tablespoons of turmeric
    • 1 Tablespoon of garam masala
    • 2 Tablespoons of olive oil
    • 2 Onions, finely sliced
    • 3 Garlic cloves, sliced
    • 500ml of chicken stock 
    • Large handful whole green olives 
    • Zest and juice 
    • 1 Lemon
    • 1 Cup of couscous
    • Small bunch cilantro or parsley , chopped
