Discover the fun of Japanese sake at Shirataki Sake Brewery in Niigata, Japan’s sake capital. The brewery has been making sake for over 170 years using pure snowmelt from one of the region’s heaviest snowfall areas. Step into a quiet, rarely seen part of the brewery and explore Chōgō, the art of sake blending. A WSET Level 3–certified guide will show you the basics and guide you through the different styles. Taste five sakes—from crisp and bright to rich and sweet—and find the flavors you like. Then have fun blending them to create your own sake. You can follow your instincts or get tips from the master brewer. Finish by choosing a kanji character and brush it onto your label with staff support.
