    Here's how to make banana bread at home

    While the banana bread has always been a classic, we couldn’t help notice amount of easy banana bread recipes and eggless banana cakes infiltrating our Facebook and Instagram feeds since the lockdown. More so, even celebrities like Alia Bhatt, Sonam Kapoor and Chrissy Teigen are whipping these!  
    That said, here's a list of delicious, easy banana bread recipes that will sure earn you bragging rights on Instagram! (And guess what, there's also an eggless banana cake recipe in a cooker, somewhere in there).

    But before we begin

    PRO-TIP: Use ripe bananas only!
    How to substitute eggs in my banana bread recipe? All you have to do is, replace 1 egg with half cup of mashed (and super ripe) banana.

    1. Classic Eggless Banana Bread Recipe

    Ingredients: 
    • 2 cups all purpose flour (maida)
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 teaspoon cinnamon powder (dalchini)
    • ½ teaspoon ginger powder
    • ¼ teaspoon coffee powder
    • ½ cup butter
    • ¼ cup castor sugar (How to make castor sugar at home?)
    • 1+1/2 cup mashed bananas
    • ½ cup milk
    • ½ cup crushed walnuts (if available)
    Directions:
    1. Pre-heat the oven to 180C. Line a 9X4 loaf pan with parchment paper. (Personally, we swipe it down with oil using a tissue).  
    2. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, coffee powder and ginger
    3. In a separate bowl beat butter and sugar, until the mixture is fluffy
    4. Mix in the bananas and use a fork to make sure it is well incorporated.
    5. Combine dry ingredients with the wet ingredients but do not over mix.
    6. Beat in the milk.
    7. Fold in the crushed walnuts. The batter will be thick.
    8. Transfer the batter into the prepared loaf pan and bake at 180C for 40-50 minutes
    9. Ta-da! Your eggless banana bread recipe is ready!

    2. Coconut Chocolate Chip Banana Bread Recipe

    Here’s something if you are looking for moist banana bread recipes with a cheeky tropical kick.
    Recipe from Half Baked Harvest
    Ingredients: 
    • 4 ripe bananas
    • 2 tbsp honey
    • 2 eggs 
    • 12 tsp cinnamon (dalchini)
    • 1 ¼ cups whole wheat flour (atta)
    • ½ cup all purpose flour (maida)
    • 1 tsp baking soda
    • ½ tsp salt 
    • ¼ cup brown sugar (Suggestion: We also like it with regular sugar)
    • ½ cup coconut milk (you can use greek yogurt for a healthier recipe) 
    • ½ cup oil
    • 1 tsp vanilla extract (if available)
    • ½ cup chocolate chips (use more or less to your preference) 
    • ½ cup toasted coconut flakes (if available) 
    Directions:
    1. Preheat the oven to 200C. 
    2. Peel the bananas and lay them flat on a lined baking tray. Drizzle with honey and sprinkle with cinnamon.
    3. Roast for 20-25 minutes until the bananas are caramelized. Remove from the oven and let it cool for 5 minute before mashing.
    4. Set aside and reduce oven temperature to 190C. 
    5. [Dry ingredients] In a small bowl, combine the whole wheat flour, all purpose flour, baking soda, and salt. Whisk thoroughly. Set aside. 
    6. [Wet ingredients] In a large bowl, whisk together brown sugar and eggs until smooth. Add coconut milk and oil until well combined. Stir in the mashed bananas and vanilla. 
    7. Slowly stir in the dry ingredients to the wet ingredients and mix until just combined. Do not over mix. Fold in the chocolate chips.
    8. Pour the batter into a 9x5 greased pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. 
    9. Take out of the oven and let it cool for 30 minutes before cutting. 

    3. Carrot Cake Banana Bread Recipe

    Ingredients: 
    • 2 cups all purpose flour (maida)
    • 1 tsp baking soda
    • 1 tsp cinnamon (dalchini)
    • ¾ tsp baking powder
    • ¾ tsp salt
    • 1 ½ cups mashed overripe bananas 
    • ½ cup finely shredded carrot
    • ½ cup honey
    • ¼ cup milk
    • ¼ cup vegetable oil
    • 2 tps vanilla extract (if available)
    • Crushed walnuts or toasted coconut (if available)
    Directions: 
    1. Preheat the oven to 180C. 
    2. Line a 9-inch loaf pan with parchment paper and grease with cooking spray or swipe it down with oil using a tissue. 
    3. [Dry Ingredients] In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Add in walnuts or toasted coconut, if available. 
    4. [Wet Ingredients] In a separate bowl, mix together mashed bananas, shredded carrot, honey, milk, vegetable oil, and vanilla. 
    5. Mix together wet and dry ingredients until just combined. (Tip: Don’t overmix!) 
    6. Pour batter into the prepared pan and set in the oven. 
    7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. 
    8. Let cool in the rack before slicing. 
    NOTE: This easy banana bread recipe actually tastes better on the second and third day, as it becomes sweeter. Simply cover and place it in the refrigerator.  

    4. Salted Caramel Banana Bread

    • ½ cup melted butter
    • 1 cup all purpose flour (maida)
    • 1 tsp baking soda
    • ¼ tsp salt 
    • ½ cup brown sugar

    • 1 tsp vanilla 
    • 1 large egg
    • 1 egg yolk
    • 3 mashed overripe bananas 
    • ½ cup caramel
    • Sea salt, for garnish (if available)
    Directions:
    1. Preheat the oven to 180C. 
    2. Line a 9-inch loaf pan with parchment paper and grease with cooking spray or swipe it down with oil using a tissue.
    3. [Dry Ingredients] In a small bowl, whisk together flour, baking soda, and salt.
    4. [Wet Ingredients] In a separate bowl, whisk together butter, brown sugar, buttermilk, vanilla, egg, and egg yolk. 
    5. Combine your wet and dry ingredients and fold in the mashed bananas and caramel. 
    6. Pour batter into your prepared pan and set in the oven. 
    7. Bake for 50-60 minutes until deeply golden or until a toothpick inserted into the center comes out clean. 
    8. Let cool and drizzle with caramel and flaky sea salt before serving. 

    5. Bonus: How To Make Banana Cake At Home Without Eggs, Without Oven

    Ingredients: 
    • 4 ripe bananas
    • 1/2 cup sugar
    • 1/4 cup oil
    • 2 teaspoons vanilla extract
    • 2-1/2 cups all purpose flour (maida)
    • 2 teaspoons cinnamon Powder (dalchini)
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/4 cup milk
    • 1/4 cup yogurt (or dahi)
    Directions:
    1. Grease the cake pan (or the containers you use to make rice and daal in the pressure cooker) with oil and dust in some flour. Keep aside.
    2. In a mixing bowl, add the over ripe bananas and mash them using the potato masher.
    3. Once mashed, add the sugar, oil, vanilla extract, milk and curd.
    4. Stir well to combine all the wet ingredient.
    5. Into the same bowl, add the cinnamon powder, baking powder, baking soda and salt. Mix well and beat until fluffy.
    6. Finally, add the maida (all purpose flour) and beat well to combine the eggless banana cake batter.
    7. Once done, pour the eggless banana cake batter into a greased cake pan. 
    8. Place the trivet at the bottom of the pressure cooker. Fill the pressure cooker with 2 inches of water.
    9. Cover the pressure cooker without the weight and bake your eggless banana cake recipe for 40 minutes on high heat.
    10. After 40 minutes, insert a knife to check if your cake is baked. Although remember, there may be some crumbs stuck, and that's completely okay!
    11. If the crumbs are cooked and not raw, you have mastered how to make eggless banana cake at home in a pressure cooker!
    12. Last step - Remove the cake from the pressure cooker immediately and allow it to cook completely, before you dig in.  
    Note: In step #8, make sure the water does not seep into the banana cake batter while it is getting cooked in the pressure cooker. The watermark should be only little less than half way through the pan. This also means you need to have a trivet with your pressure cooker.
