What to expect
Faithfully recreating the flavors of Kyoto, we inherit the "Five Senses of Handcrafting": feeling the temperature when holding the rice, controlling the force when shaping it, and infusing sincerity when wrapping the filling. Using freshly cooked Koshihikari rice, we awaken the rice grains' softness with the warmth of our palms, control the tension of our fingertips during shaping, creating beautiful forms that still breathe, allowing the sea breeze and the fragrance of rice to condense into a heart-warming "Waku O-Musubi."
With the heart of an artisan, we preserve the ordinary flavors. Rice grains meet carefully selected ingredients, dancing between fingertips, wrapping in the richness of tuna and the salty freshness of salmon. Without mechanical pressing, only a dialogue between the palm and the ingredients: the rice grains are distinct yet inseparable, the filling peeks through, and the curve fits perfectly in the palm. The rice ball embodies ten years of skill and craftsmanship.
The final presentation combines premium Koshihikari rice, wrapped in Grade A seaweed, and paired with Norwegian deep-sea salmon, of which only 50% is selected, weaving the deep-sea freshness into the rice ball to create a small wave of flavor.
