Kick off with the classic home-made drink of rose sharbat with rose petals and kairi ka paani (a refreshing water-based drink made of raw mango). Move on to the appetite-awakening lassi (a local version of all-natural yoghurt) and move on to the mains. Your main meal is subject to change but the sample menu gives a good idea of the delicacies that await: daal-e-mewar aur baati, kadi chawal, hara tamatar aur mirch ki sabzi and papad ki sabzi. If you are unfamiliar with Indian cuisine and the names don’t tell you much — just know that you will experience a parade of strong flavors and all the dishes on the menu will be vegetarian. Enjoy your meal to the accompaniment of exotic sauces and spices: a homemade paste of red chillies and garlic, mango and veggie pickles and chutney.
