What to expect
Originating from the Konkan region of Maharatshtra and Goa, Malvani cuisine is different from that of the rest of India: though featuring a variety of vegetarian dishes, it is mostly meat-based. The best way to explore the authentic Malvani cuisine is though a savory home cooked meal at a local chef’s house. You will start with a welcome drink of Kokam soda and move on to appetizers: fish fry marinated in the very special Malvani masala. Then, try some of the region’s traditional mains: Bombil in green gravy, Bangda tikhale and Malvani chicken curry. The meal is complete with a generous serving of steamed rice and Vade — medium sized fried breads. Pair your sumptuous meal with Sol Kadi, a spicy and tangy drink that can improve digestion and a refreshing Koshimbir salad.
